I fell in love Chocolate Melting Cake on my Carnival Cruise Honeymoon (if you've been on a Carnival Cruise you know what I'm talking about!) and as soon as my husband and I returned I knew I needed to figure out how to make it at home. After looking at several recipes online, I have been making this configuration for over a decade. I created this recipe using ingredients I either always have at home or can easily get at my local grocery store, and is easy to make using the microwave and oven.

Chocolate Melting Cake for Two

The key to the perfect Chocolate Melting Cake is baking it the correct amount of time. Every oven is a little different but mine are ready to take out after 12 minutes. You'll want to make sure the outside of the cakes look spongy, while the center isn't cooked all the way. This will leave a cakey outside with a warm, gooey, chocolate pudding like center.

If you bake it too long, you'll just have a chocolate cake, missing out on the flowing chocolate in the middle. And vice versa if you don't bake it long enough, you'll just have a cup of warm hot fudge for your ice cream and be missing out on the goodness of the decadent chocolate cake. Don't be scared of the baking of the cakes but do keep an eye on them. If you want you can even do the toothpick method of checking the cakes, poking both the outside and center.

The most important part of Chocolate Melting Cake for Two is sharing it with someone special. As I said, this was a favorite dessert of my husband's and mine on our honeymoon so we always make it to celebrate our Wedding Anniversary and Valentine's Day. Our kids now don't want to miss out too, so I have to triple the recipe for Chocolate Melting Cake for Six...

Chocolate Melting Cake for Two

Chocolate Melting Cake for Two

2 oz Semi-Sweet Baking Chocolate
1/4 cup Butter
1 Egg
1 Egg Yolk
1/2 cup Powdered Sugar
3 Tbsp Flour
Vanilla Ice Cream

Butter two ramekins or soufflé cups and set aside.

Microwave chocolate, broken up and butter on High for 1 minute. Stir with wire whisk till smooth. Blend in egg and egg yolk. Stir in powdered sugar and flour. Then divide equally between prepared cups.

Bake at 425°F for 12 minutes or until sides are firm but centers are soft. Serve immediately topped with ice cream. You can set the hot ramekin on a plate or we simply like to hold them with hot pads.
