It’s National Farmers Market Week, and there’s no better way to celebrate than by shopping local and letting the season’s freshest ingredients inspire your next meal. That’s exactly what I did at the Hampton Farmers Market this week — and the result? A flavorful, One Pan Pork Egg Roll Bowl!
This year, we’ve been selling our VIP Farms Pork at the Hampton Farmers Market, and during Tuesday’s market, I decided to let the fresh produce and local goodies inspire my meal planning for the week. One of the first things that caught my eye were the giant cabbages from Puffer Roske Farms — they were huge! I couldn’t resist the size and freshness and instantly knew it would make the perfect base for an egg roll bowl featuring some of our own VIP Farms ground pork. From there, I picked up bell peppers and onions from Koenigs’ Acres Farm, plus some garlic from Hershey Family Nursery — and just like that, I had the makings of something delicious. I even treated us to dessert from Becca’s Bakery… although the kids devoured it before we even left the market!
Our local Hampton Farmers Market is full of treasures just like these. It runs Tuesdays and Fridays from 4:30 to 6:30 p.m. on Hwy 3, just east of Hardee’s. Whether you’re after farm-fresh produce, locally raised meat, a sweet treat or some amazing crafts, there’s something for everyone!
Here’s how I turned my finds into a quick, hearty, and healthy dinner:
Pork Egg Roll Bowl Recipe
Ingredients:

1 lb ground pork (VIP Farms)

1/2 head of large cabbage, shredded (Puffer Roske Farms)

1 bell pepper, chopped (Koenigs’ Acres Farm)

1 onion, chopped (Koenigs’ Acres Farm)

4 cloves garlic, minced (Hershey Family Nursery)

1/4 cup soy sauce
-
salt and pepper to taste

Optional toppings: yum yum sauce, sriracha or sweet chili sauce
Instructions:

In a large skillet over medium heat, cook the ground pork until browned and cooked through. Season with salt and pepper. Drain if needed.

Toss in the chopped onion and pepper and sautĂ© for 2–3 minutes.

Stir in the garlic and cook until fragrant, about 30 seconds.

Add the shredded cabbage and cook until tender, about 5–7 minutes, stirring often.

Pour in the soy sauce and season with salt and pepper. Mix everything together and cook for another 2 minutes to combine flavors.

Serve warm, topped with favorite sauce for an extra kick.
This dish is simple, satisfying, and perfect for a busy summer weeknight. Plus, it’s packed with local flavor — literally!
