I am so excited that this year I had a bumper crop of tomatoes and that I actually have some extra that I can make salsa with. In fact, I have so many tomatoes this year I think I am going to have to do something more with them than just BLTs, cooking and canning salsa. Do you have any suggestions? What do you like to do with your tomatoes? Any good recipes to share?
You can always can the tomatoes by themselves to add to chili, or make a homemade spaghetti sauce. I don't have any good recipes, though!

DeleteCut them in half, place on a cookie sheet. Drizzle with olive oil, salt and pepper, parmesan cheese and breadcrumbs. Bake for about 15-20 min. Enjoy! I LOVE roasted tomatoes like this.

ReplyDeleteWat leuk dat de tomatenoogst zo goed is gelukt en dat er genoeg overbleef om zelf salsa te maken! Met extra tomaten kun je ook pastasaus maken of ze roosteren met knoflook en kruiden. Na een middag in de tuin of in de keuken is het trouwens ook fijn om even te ontspannen met wat online entertainment via b7casino, gewoon als kleine afwisseling.
