I love making soups during the winter. I love smelling a soup simmer all day in my Crock Pot and I love experimenting with my Instant Pot. One of my personal goals this year is actually to learn to love my Instant Pot.
Last week I was quite proud of myself, I cooked an entire chicken in my Instant Pot using my friend Michelle of Simplify, Live, Love's recipe. This fall I bought a couple of our neighbor kid's 4-H chickens and due to the size, I did have to cut up the chicken to fit in my Instant Pot, but the recipe still worked out great. The chicken fell off the bone and shredded easily. Then, thanks to my friend Sara Ross's InstaStory, I was inspired to toss all of the bones and skin back into my Instant Pot, along with 8 cups of water and then set the Instant Pot to the Soup/Broth program on More mode for two hours. After the bone broth was done, I strained the bones and skin out of the liquid and put the liquid in my refrigerator. The next day I skimmed the fat off the top of the broth and it was time to use my broth and part of my chicken to make my Instant Pot Chicken Noodle Soup!
Instant Pot Chicken Noodle Soup
4 Tbsp Butter
1 Onion, diced
1 cup Baby Carrots, diced
2 stalks Celery, diced
4 cups Chicken, shredded
8 cups Bone Broth or Chicken Stock
12 oz dry Egg Noodles
Parmesan Cheese
Salt and Pepper
Turn Instant Pot on the Saute setting and let the butter melt. Then add the onion, carrots and celery and let cook for a few minutes til tender. Then add your chicken and broth (both of which I made the day before in my Instant Pot). Put the lid on and make sure the valve is turned to sealing. Let the soup cook for 20 minutes on the Soup/Broth program on Normal mode. After the 20 minutes is over, move the valve to release, let it naturally release or quick release and then add the dry egg noodles. Put the lid back on, with the valve on seal and let the noodles rest in the hot soup for 8-10 minutes, til cooked to al dente. Then top you chicken noodle soup with shredded Parmesan cheese and salt and pepper.

These all look so good! I love soup this time of year. I generally make it on the stove or slow cooker, but I can see the instant pot making it fast and easy!
