Comfort Food Classic - Cheesy Hashbrown Casserole

Anyone else craving comfort food these days? I will admit, it has been a little crazy around here lately between having the kids at home and getting ready for spring planting and it has all added up to me wanting a simple, carb loaded, cheesy dish to end my day with.  Let me introduce you to my go to Cheesy Hashbrown Casserole recipe!

I first fell in love with this classic comfort food dish preparing a dozen at a time with my church youth group for every Easter breakfast.  Growing up, cheesy hashbrown casserole was directly linked to church for me.  I only ever had the cheesy potato dish with a crunchy buttery top at Easter breakfast or at funeral luncheons.  I guess that is why some people affectionately call them "Funeral Potatoes."  But as I've grown into adulthood I've stopped limiting my experience and my family enjoys having them along with breakfast, or as a side dish at supper (we especially love them with ham balls).

Comfort Food Classic - Cheesy Hashbrown Casserole - perfect for Easter breakfast or dinner

Cheesy Hashbrown Casserole

1 cup Butter
1 - 10.5 oz can Cream of Chicken Soup
16 oz container Sour Cream
1 1/2 tsp Seasoning Salt (like Lawry's or Cookies Flavor Enhancer)
1 tsp Onion Powder
2 cups Cheddar Cheese, shredded
32 oz bag frozen Diced/Cubed Hashbrowns
3 cups Corn Flakes

Combine 1/2 cup melted butter, cream of chicken soup and sour cream together in large bowl.  Stir well and then add seasoning salt, onion powder and cheddar cheese.  Once combined, add hashbrowns and fold together til evenly mixed together.  Place mixture into 9"x13" pan.

Place corn flakes in re-sealable bag and add other 1/2 cup of butter melted.  Move the butter around in the bag to coat corn flakes.  Then sprinkle butter covered corn flakes on top of casserole.

Bake uncovered at 350°F for 40 minutes or until golden brown and bubbly.
