Trail Mix Cookies

Today marks the first day back to school for my kiddos so I decided to make an after school treat that plays ode to summer and is fun to help celebrate the new school year: Trail Mix Cookies.

One of our favorite things to do in the summer is go on road trips. We always pack a cooler and some snacks for the car ride. Trail Mix is one of our go-to foods to bring along because it can stay in the car and there is a little something in it for everyone.

When creating this cookie I decided to start with a classic butter, sugar, egg, and flour base and then added in some of our favorite ingredients from Trail Mix. My kids' favorite ingredient is probably the M&Ms, but I personally love the chopped peanuts and pretzels. Only one of my kids really likes raisins but I snuck some of them in there too, along with chocolate and peanut butter chips. You'll love the variety of flavors and textures in the these cookies! This is a fun treat anytime of year!

Trail Mix Cookies

1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 Tbsp vanilla
3 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup plain M&Ms
1 cup chocolate chips
1/2 cup peanut butter chips
1/2 cup peanuts, chopped
1/2 cup pretzels, chopped
1/2 cup raisins

Cream together the butter and sugars. Mix in the eggs and vanilla till creamy. Then stir in the dry ingredients until fully incorporated. Lastly add the trail mix ingredients: M&Ms, chocolate chips, peanut butter chips, peanuts, pretzels and raisins. I like chopping the peanuts and pretzels by using my food processor to get them to the size I want for the cookie.

Bake cookies at 350°F for 10-12 minutes and enjoy! Makes 4 dozen.

  2. Thank you so much! Cookies are my favorite guilty pleasure! My daughter is allergic to eggs. I'm breastfeeding so that means no eggs for me either. I miss cookies more than anything. And best of luck for your kids for school.
