Want to make some Christmas cookies this week but just don't have the energy or time? Then make the easiest Christmas cookies ever that uses just two ingredients - Peanut Butter Cup Cookies!
I love making Christmas cookies but will admit this year I am pairing down my normal amount to just our favorites, and our youngest daughter requested I make these Peanut Butter Cup Cookies! I started making these cookies really just as a filler for cookie trays that I'd give out to neighbors, but they are so easy to make and take so little time, they've become a staple for our family every holiday season.
Sometimes you just need something simple and easy this time of year, and these cookies are just that! All you need is some refrigerated peanut butter cookie dough, a bag of miniature peanut butter cups, a mini muffin pan and you're set! I like to buy 16oz Pillsbury Peanut Butter Cookie Dough with "12 big cookies", that way I can simply cut each preformed cookie in half to fill my 24 mini muffin cup tin. And one regular 9.9oz bag of miniature Reese's peanut butter cups will give you enough to top each cookie, plus have a few extras to munch on.
My biggest tip for making these Peanut Butter Cup Cookies is to liberally coat your muffin tin with cooking spray so the cookies are easy to take out. I use a spoon to help remove them after they are completely cooled.
Peanut Butter Cup Cookies
24 miniature peanut butter cups
Take a 24 mini muffin tin and liberally coat with cooking spray. Then take your refrigerated cookie dough and cut each "big cookie" in half creating 24 cookies. Roll each piece of cookie dough and lightly press one in each cup of the mini muffin pan. Bake at 350°F for 10-12 minutes, until just set.
Meanwhile, unwrap 24 miniature peanut butter cups so when the cookies come out of the oven, and the dough is still warm, you can push a peanut butter cup chocolate into each cookie cup. Let the cookies completely cool before using a spoon to help remove them and enjoy!
How easy was that? Who doesn't love the combination of peanut butter and chocolate? And when you can make, bake and eat these cookies in less than an hour, you really can't go wrong!
