There is something about Thanksgiving and pie that just go together and after trying a viral cookie that was a fail for me, I decided to modify the recipe and make it into a holiday pie instead! This Pumpkin Smores Pie would be a fun addition to your dessert table this Thanksgiving, and with only four ingredients, this dessert will be easy as pie!
At the end of harvest my kids and I were excited to try the viral Pumpkin Smores Cookie that we saw a video for that takes a graham cracker, topped with a Hershey's bar, large marshmallow and refrigerated pumpkin cookie dough. It was delicious, but a mess! Our marshmallows didn't stay on top of our graham crackers and chocolate (despite even using toothpicks to try to keep them together), which then also pushed the cookie dough around and let's just say they didn't look like cookies... So, since the large marshmallows seemed to be the biggest problem for me, I decided to modify the recipe and make it into a pie!
The point of these cookies was that they were easy to make so I took that to heart when turning them into a pie. I started off with a premade graham cracker pie crust. I then broke up two full size milk chocolate bars and spread the chocolate evenly cross the bottom of the crust.
I then spread two cups of mini marshmallows over the chocolate and crust. The mini marshmallows worked great and puffed up just enough during the baking.
Lastly, I took refrigerated pumpkin cookie dough and broke it into pieces and covered the top of the crust. I then baked it for 20 minutes at 350°F. Allow the pie to fully cool before cutting to allow the crust to firm up.
My kids loved the pie and decided that we should add it to our Thanksgiving dinner! We loved the combination of the chocolate with the pumpkin and the graham cracker crust was a nice compliment to this pie. And the marshmallows are simply fun! This is an easy addition to your menu and can be made ahead of time.
