Apple Cinnamon Roll Pie #AppleWeek
It's Day 4 of #AppleWeek and I hope you have had fun checking out the over 100 recipes shared! I couldn't go this week without sharing a pie recipe. I know for me, when I think apples, one of the first things I think of is an apple pie. Now you really can't go wrong with a classic apple pie like I've shared in the past, but the apple pie is something fun to experiment with, and with the beautiful Pyrex Watercolor Collection pie plate, you just have to do something innovative in it.
My twist on apple pie is using cinnamon rolls as the pie crust! I originally saw this idea on Pinterest literately five years ago but had never tried it til this year. The original idea included making cinnamon rolls to then press into a crust for a sweet potato pie, but since I've never had a sweet potato pie and I wasn't going to go through the work of making cinnamon rolls to just then press into a pie, I used a tube of refrigerated cinnamon rolls! The cinnamon roll is the perfect compliment to the apple pie and I hope you enjoy this tasty combination.
Apple Cinnamon Roll Pie
1 - 8 pack refrigerated Cinnamon Roll tube, generic brand
4 Rainier Honeycrisp Apples
1 Lemon
3/4 cup Sugar
1/4 cup Flour
2 tsp Cinnamon, ground
Topping:
1/2 cup Butter, softened
1 cup Flour
1/2 cup Sugar
1 tsp Cinnamon, ground
Press the refrigerated cinnamon rolls into your Pyrex pie plate, making sure to seal all edges. I recommend using the generic brand of cinnamon rolls, as they are actual cinnamon rolls, and not biscuits with cinnamon sugar disks.
Then cut your apples into even slices. *Chef's note - I use my apple slicer and corer to cut the apples in eight, then skin the apple, and then slice each eighth in half, creating sixteen slices per apple.*
Put 3/4 cup sugar in a bowl and perfume the sugar with the zest of a lemon (this is a trick I learned from my friend Cristen of Food & Swine). Add 1/4 cup flour and 2 tsp cinnamon and mix. Toss the sliced apples with 1/2 of a lemon's juice and then toss in the sugar mixture. Pour apple mixture into cinnamon roll pie crust.
In a separate bowl mix the butter, 1 cup flour, 1/2 cup sugar and 1 tsp cinnamon to make a crumble topping. Sprinkle the crumbles on top of the pie.
Bake at 350°F for 45-60 minutes, or until the inside filling is bubbly and the crust browned.
Let cool for 5-10 minutes and then use icing from cinnamon rolls and drizzle on top of pie.

Apple Bacon Jam
It's Day 2 of #Apple Week and I had to share another recipe today because it is Johnny Appleseed's Birthday! How perfect is that! I thought it would also be a perfect day to share a recipe that highlighted the delicious Honeycrisp Apples I received from Rainier Fruit. Honeycrisp apples are one of my favorite varieties of apples because they are perfect for baking and cooking, as well as eating raw. They are a great universal apple with a sweet, yet tart flavor, and they were a perfect addition to my Bacon Jam!
Apple Bacon Jam
1.5# Bacon
1 Onion
1/4 cup Brown Sugar
1 Tbsp Hot Sauce
1 1/2 cups Apple Cider
1/4 cup Apple Cider Vinegar
1/4 cup Pure Maple Syrup
Salt & Pepper, to taste
Cut bacon into 1" slices and cook in frying pan until lightly browned and beginning to crisp, around 20 minutes. Take bacon out of pan and add chopped onion in bacon fat. Fry til soft, around 5 minutes.
Transfer the bacon and onion to a pot and add the chopped apples, brown sugar, hot sauce, 1 cup apple cider, vinegar, maple syrup, salt and pepper. Simmer, uncovered, for 1 1/2 hours adding 1/4 cup of apple cider every 30 minutes and stir. After the mixture has become syrupy, let it cool for 15 minutes and place in food processor and blend to a "jam" texture.
Refrigerate in airtight container.

Apple Oatmeal Coffee Mug Cake

#AppleWeek is here and I'm excited to be sharing my Apple Oatmeal Coffee Mug Cake recipe with you! It is perfect for a quick breakfast on the go, or for the mornings you want to indulge a little but don't want to share. 😉
But before I get to the recipe, I've got to share about everything planned for #AppleWeek! Last year was the inaugural year of AppleWeek and the group of bloggers had so much fun that Carlee of Cooking with Carlee decided to host it again, add more blogger and add more recipes!

Now onto my Apple Oatmeal Coffee Mug Cake! This coffee cake tastes like fall in a mug. With the combination of applesauce, oatmeal, along with the cinnamon and vanilla - it's the perfect way to start off your day.
Apple Oatmeal Coffee Mug Cake
1 Tbsp Butter, softened
2 Tbsp Sugar
3 Tbsp Applesauce, unsweetened
Drop Rodelle Vanilla
1/4 cup Flour
1/8 cup Flahavan's Irish Oatmeal
1/8 tsp Baking Soda
1/4 tsp Cinnamon, ground
Topping:
1 Tbsp Butter, softened
1 Tbsp Flour
1 Tbsp Flahavan's Irish Oatmeal
1 Tbsp Brown Sugar
1/4 tsp Cinnamon, ground
In coffee mug, mix the butter with sugar. Then add the applesauce and vanilla and stir. Next add the flour, oatmeal, baking soda and cinnamon and mix well.
In a separate container, mix all five topping ingredients together, forming a wet crumble. Add the crumble on top of the cake in the coffee mug.
Microwave for 1 minute 11 seconds (because doesn't everyone just press 111 on their microwave) to bake. Let cool a couple minutes and enjoy!
My favorite bite of this coffee cake is when you get a nice helping of the oatmeal topping with a spoonful of the apple coffee cake!

Fall has arrived and the annual debate has begun - are you Team Apple or Team Pumpkin. I personally enjoy both but if I had to choose I would go with Apple. Apples are so versatile for both sweet and savory dishes, and you have access to fresh apples for a longer time-frame than you do pumpkin. No matter which side of the aisle you sit on, I think we all can agree that there is something special about both of these fall flavors.
Now while I am for both Apple and Pumpkin, this week is all about Apples! In fact, this week I'm celebrating #AppleWeek with other food bloggers. 1 Minute Caramel Apple Dip
It's the last day of Apple Week and I hope you have been having as much fun as I have checking out all of these great apple posts! Today we are all sharing our "Anything Apple Goes" posts. Pretty much it's a chance for us to share anymore of our apple posts that we haven't gotten to yet ;)
Today I'm sharing one of my go-to, quick snacks - my 1 Minute Caramel Apple Dip. This is a recipe I learned from my mom how to make when I was a kid and that I plan on sharing with my kids how to make once they're old enough to handle a hand mixer.
This dip is not only great on apples, but any fruit that you're looking for a sweet and creamy dip for. It works great to bring to get-togethers with family and friends, because it's quick to make and it's a nice, healthier option to add to the "food table". Plus my kids (and I) love it. I sometimes will to bring this dip, doctored up a bit, to gatherings. I learned this trick from my friend Beth Ann at It's Just Life. Just take the cream cheese apple dip, spread it on the bottom of a pie plate, then pour caramel sauce on top, and cover with Heath Bar bits. It adds a little something for entertaining and it's oh, so good. :)
1 Minute Caramel Apple Dip
8 oz Cream Cheese
1/2 cup Brown Sugar
1/2 tsp Vanilla extract
3/4 tsp Caramel extract
Mix ingredients together with a hand mixer until smooth. Store in the refrigerator. Serve with apple slices or your favorite fruit.

#AppleWeek Apple Brown Betty
I'm continuing to celebrate Apple Week with over 20 bloggers this week and today we're sharing our favorite Apple Sweet Treats! When I think of apples, I of course start thinking of sweets. At first I thought I'd share my Old Fashioned Apple Pie recipe, but then I thought I'd go with my go-to apple dish that I love to make as soon as we pick the first apples from our apple tree - Apple Brown Betty.
An Apple Brown Betty is very similar to an apple crisp, except part of the crumb mixture is mixed in with the apples and then more is placed on top. If your favorite part of a crisp is the topping, you'll love my Apple Brown Betty. I also have oatmeal in my crumb mixture, because, well, I love oatmeal. I'm not sure if Brown Betty's are supposed to have oatmeal, but mine does, and I think it gives it that added something. This is a simple, naturally sweet treat that I love to serve with a scoop, or two, of homemade ice cream on top.
Apple Brown Betty
5 to 6 medium-sized apples, peeled and sliced evenly
cinnamon sugar, to taste
1/2 cup flour
1/4 cup brown sugar
1/4 cup butter, softened
1/2 tsp cinnamon
3/4 cup oatmeal
In a bowl, mix the flower, brown sugar, butter, cinnamon and oatmeal. Sprinkle the sliced apples with cinnamon sugar. Then toss the apples with half of the crumb mixture. Put apple mixture into a great 1 1/2 quart casserole. Sprinkle the rest of the crumb mixture over the top of the apples.
Bake at 350 degrees for 35 minutes. Serve with homemade ice cream.

An Apple Brown Betty is very similar to an apple crisp, except part of the crumb mixture is mixed in with the apples and then more is placed on top. If your favorite part of a crisp is the topping, you'll love my Apple Brown Betty. I also have oatmeal in my crumb mixture, because, well, I love oatmeal. I'm not sure if Brown Betty's are supposed to have oatmeal, but mine does, and I think it gives it that added something. This is a simple, naturally sweet treat that I love to serve with a scoop, or two, of homemade ice cream on top.
Apple Brown Betty
5 to 6 medium-sized apples, peeled and sliced evenly
cinnamon sugar, to taste
1/2 cup flour
1/4 cup brown sugar
1/4 cup butter, softened
1/2 tsp cinnamon
3/4 cup oatmeal
In a bowl, mix the flower, brown sugar, butter, cinnamon and oatmeal. Sprinkle the sliced apples with cinnamon sugar. Then toss the apples with half of the crumb mixture. Put apple mixture into a great 1 1/2 quart casserole. Sprinkle the rest of the crumb mixture over the top of the apples.
Bake at 350 degrees for 35 minutes. Serve with homemade ice cream.

Harvest Brats with Apple Slaw
It finally feels like fall and keep your fingers crossed, we'll begin harvesting our corn and soybeans tomorrow. One of my quick dishes I can make for the masses after we come home for the night from the field are my harvest brats with apple slaw. It warms up the body and is a classic comfort food that gives you a taste of fall.
Pork and apples work so well together, and between being a pig farmer and having a freezer full of pork, and having an apple tree that produces delicious apples, I seem to always have the ingredients too. ;) The apple slaw is probably my favorite part of this dish. The combination of mustard with the apples and onion creates this savory, yet slightly sweet topping that pairs perfectly with the seasonings of the brat!
Harvest Brats with Apple Slaw
Vegetable oil
4 pork brats
2 cups water
2 large apples of your choice
1 onion
Salt and pepper
1 cup apple cider
1/3 cup brown mustard
2 Tbsp brown sugar
4 brat buns
Place a large skillet over medium-high heat with some vegetable oil covering the bottom of the pan. Place brats in the pan and brown both sides of the brats. This will take 4 minutes.
Once the brats are browned, add water to the pan to cover the brats half way up. Continue to cook the brats for 8 minutes.
While the brats are cooking, slice the apples and onion. I like to use an apple corer/slicer to cut my apples and then I cut each slice in half. I also prefer to leave the skin on the apples.
Once the brats are finished cooking, remove from pan and set aside. Remove any excess water from the pan and add the apples and onions to the pan. Season with salt and pepper and cook until tender, around 4 to 5 minutes.
Whisk apple cider, brown sugar and mustard together. Add mixture to the apples and onion and bring to a bubble. Add brats and simmer on low for a few minutes.
Serve each brat on a bun with the apple slaw mixture on top. Enjoy!
